As it stands, a Scout (Just xx4x, Master Scout is almost double that) can harvest a level 70 critter from a random spin group for about 700-1000, depending on the health of the creature. With a droid and veghash, a scout can rake in over a million in meat/hide/bone in a mere afternoon of spinning. Extremely lucrative.
Now, fishing... you have a minigame that requires bait. If you manage to catch a fishie that you can harvest, you get some extra bait. It isn't *QUITE* self-sufficient, but you can go for a long time.
The harvests yield about 500ish per fish, if my memory serves. You can get some cool collectibles, a title, etc. Not as lucrative for getting your meat but
at least it is somewhat engaging, with some rewards similar to Scout Harvesting (with what the bone/hide/meat/egg/milk collectibles) The yields could be better for the effort one has to put into it.
But now we get to the Mollusks/Crusteans.
You cannot pick which one to go for. Often, you will find nothing. And if you do, the yield is 7-12. It is boring, it is pretty much the same as surveying, but you need to manually use the tool again after every use, your yields are pathetic, there are no minigames attached to it and worst of all, you might not even get the resource you're after. I am fairly convinced at this point that it is more lucrative to use the survey tool that always yields 1 resource is a faster method, because if you're unlucky and get a streak of nothings and/or the wrong resource, the "always gets 1 resource at a longer cooldown on yielding anything" will inevitably catch up.
I was doing it for an hour. Standing in water, and just mindlessly clicking the same damned thing. I got 1k of the thing I want 100k of.
It was all that I could stand.
